Tea-to-water ratio formula
leaf grams = reference leaf grams × vessel milliliters ÷ reference milliliters
Western profiles use a 250 ml reference and gongfu profiles use 100 ml. The lighter, middle, and stronger settings choose the low end, midpoint, or high end of the tea profile’s leaf, temperature, and time ranges. Water volume scales leaf mass; it does not automatically scale steep time or temperature.
Worked example: Sencha in a 400 ml pot
- Sencha’s Western leaf range is 2–3 g per 250 ml, so the middle starting point is 2.5 g.
- Scale the leaf: 2.5 × 400 ÷ 250 = 4.0 g.
- The middle of the listed 70–80°C range is 75°C, and the middle of 60–120 seconds is 90 seconds.
- Start with 4.0 g at 75°C for 90 seconds, then change only one variable after tasting.
